Green Chile Chicken Enchilada’s

I’m slowly figuring out a routine that allows for working, time with Cason and cooking every night.  I’ve tried a few new things the past few weeks and this was definitely one of my favorites.

I always thought I didn’t like Enchilada’s because I don’t like the traditional ranchero sauce that most restaurants serve. After Cason was born, a few different people brought us enchilada’s.  Some were more traditional with beef and red sauce and some were chicken with cheese or sour cream sauce.  I liked all the different versions so I knew it was time to make them myself.

The Foodie Bride has a Green Chile-Sour Cream Chicken Enchiladas Recipe that is highly recommended and freezes well so I decided to give it a try.  It was a huge success and not TOO hard to make.

I left out the cilantro (because I don’t like it) but didn’t change anything else.  We’ve had this several times in the last month since I made it the first time.  It makes enough for two full meals (I put one in the freezer) and some lunches of leftovers.  Perfect!

Naked Baby

While at Ryan’s cousin’s wedding weekend, we attended a picnic on this beautiful property outside of Fort Worth.  It was H-O-T hot so we stripped Cason down and found a nice shade tree to lay out the blanket.  He was so happy and just so cute so I snapped a few pictures (go figure… Mom taking pictures). 

As you will see, I got a little carried away.

Trying out the Jumperoo

We’ve been putting Cason in the Jumperoo for a couple of months now.  Of course, at first he couldn’t touch the ground and he could barely hold his head up but he liked to look at the different toys.  Now, he can touch the ground and he sits up pretty good.  But he hasn’t really figured out how to jump.  It’s mostly just swaying and sort of walking in place.

14 Weeks

Cason’s 14 week birthday was while we had lots of family from Neanie’s side here visiting.  I snuck in a quick photo session.  Cason was NOT happy about it.

Cason is really starting to be a lot of fun.  He smiles and laughs more and more each day and his head control is almost 100%.  He’s so alert and will follow us around the room, especially his daddy.

3 Months

We were travelling on Cason’s 3 month birthday last Friday. With it being my first week back at work and trying to get packed up and on the road for our first road trip with a baby, there was no time for official 3 month pictures. 

To celebrate his birthday, Cason took his first road trip to Fort Worth for Ryan’s cousin Brad’s wedding.  He had his first visit to Buc-ee’s and then attended his first Rehearsal Dinner followed by his first night in a hotel.

A few pictures taken on his 3 month birthday will have to do.

And he got to see this guy.  But we didn’t get too close -- especially after the handler almost let him get loose.  Yikes.

Four Generations

Cason met his Great Grandparents this weekend and we got a great picture of the 4 guys… all with the middle name “Philip”.
